Ingredients (makes one cup of marinade)
4 Tbs lemon juice
5 Tbs olive oil
1⁄4 cup vinegar
1 packet Portuguese Peri Peri Seasoning (7g)
1 Tbs chili flakes (optional for extra heat)
Mix all the ingredients together and marinade chicken overnight in the fridge.
Coals must be very hot for the chicken to acquire the “blackened” look and taste. continue basting the chicken as it cooks.
Serve with fresh baguettes and traditional Portuguese salads.
